Bacon Cheddar Broccoli Frittata

About the Recipe

This is the fifth meal we had on our 3 day extreme keto/almost carnivore meal plan. We cooked the bacon and broccoli the day before, so that really cut down on the prep time. It was delicious and very filling and only had 4g net carbs and 712 calories!

Ingredients

  • 6 large pasture raised eggs

  • 2 tbsp heavy whipping cream

  • salt & pepper to taste

  • 4 slices bacon chopped

  • 1/2 cup cooked broccoli chopped

  • 1/2 cup freshly grated sharp cheddar cheese

  • 1 tbsp ghee

Preparation

Step 1


Whisk eggs with whipping cream, salt & pepper. Preheat oven to 400 degrees Fahrenheit.


Step 2


Place cooked and chopped bacon and broccoli in a small cast iron skillet with ghee and toss until warm over medium heat.


Step 3


Pour egg mixture into cast iron skillet and gently mix with bacon and broccoli to evenly distribute them. When edges turn white, sprinkle shredded cheddar on top.


Step 4


Put cast iron skillet in oven for about 15 minutes or until top looks raised and brown.
