About the Recipe
This is the sixth and final meal we had on our 3 day extreme keto/almost carnivore meal plan. We have nicknamed it "Gumbo 'Ghetti", because it really was reminiscent of gumbo. Being able to recreate comfort food from our high carb days brings us a lot of joy. And, all of that comfort only had 1g net carbs and 427 calories per serving!
Ingredients
2 Servings well lean organic konjac noodles
20 wild caught Argentine red shrimp
1 tbsp butter
2 cups spinach
1 EverGood fully cooked hot link sausage chopped into small pieces
Preparation
Step 1
Rinse konjac noodles in strainer with cold water. Heat a wok to medium high heat and add noodles to dry off all of the moisture.
Step 2
Push noodles to one side of the wok and add butter and shrimp to the other side. Cook shrimp for 2-3 minutes on each side, until they look pink and feel firm.
Step 3
Add spinach and sausage to wok and toss all ingredients together, until the spinach is wilted and the fully cooked sausage is warm.
