Salmon Filet with Spinach Salad and Hero Quesadillas

About the Recipe

This is the second meal we had on our 3 day extreme keto/almost carnivore meal plan. The salmon filets were delicious and those Hero tortillas made incredibly flakey, crispy quesadillas! We had our spinach salad with a homemade mayonnaise based dressing, but you could buy a 0 carb dressing if you don't want to make one. Only 1g net carbs and 635 calories without the dressing.

Ingredients

  • 2 salmon filets

  • salt & pepper to taste

  • 2 tbsp ghee

  • 4 cups spinach

  • 2 tbsp 0 carb salad dressing of your choice

  • 2 Hero tortillas

  • 1/2 cup freshly shredded sharp cheddar

Preparation

Step 1


Wash and dry spinach leaves and toss with the 0 carb salad dressing of your choice.



Step 2


Heat 1 tbsp of ghee over medium heat in a non-stick pan. Place salmon filets skin side down in pan. Season salmon with salt & pepper to taste. Cook 2-3 minutes on each side. Set salmon aside.



Step 3


Shred sharp cheddar cheese.


Step 4


Heat the other tbsp of ghee over medium heat in the same pan. Place one tortilla in pan and fill with 1/4 cup shredded cheese. Once cheese starts to melt, fold tortilla over onto the cheese. Place another tortilla in pan and fill with 1/4 cup shredded cheese. Once cheese starts to melt, fold tortilla over onto the cheese and flip the other quesadilla. Remove the first quesadilla and flip the second one until golden brown.
